The Secrets to a Moist & Rich Cornbread

Sometimes we eat something so delicious and amazing we feel the need to share it with all of our apartment home residents.  This is what this blog post is all about.  Upon eating at a friend’s house the other day we wer able to have the best cornbread -EVER.  Her aunt was kind enough to give us permission to share the recipe with you here; We’re fairly certain you will enjoy it!  Thank you Aunt Linda! So here goes…

Aunt Linda’s Cornbread Recipe

Preheat Oven to 350 degrees; Serves 8-10

Ingredients

  • 1 Cup Butter (at room temperature)
  • 1 Cup Sugar
  • 4 Large Eggs
  • 2 Cups Canned Creamed Corn
  • 1/2 Cup Shredded Monterey Jack Cheese
  • 1/2 Cup Shredded Cheddar Cheese
  • 1 Cup Flour
  • 1 Cup Yellow Cornmeal
  • 4 Tsps. Baking Powder
  • 1/4 Tsp. Salt

Directions

  • Grease a 13×9 inch baking pan (we like to use glass)
  • Using an electric mixer, beat the butter and sugar until blended
  • Add the remaining ingredients a little at a time until it is all blended
  • Be sure not to over mix!
  • Bake for approximately 55 minutes
